Abstract

Abstract Vegetable protein concentrates of high viscosity are obtained by contacting undenatured, defatted, vegetable protein source material with an aqueous system, acidifying said system and subjecting the material to centrifugal speeds and differential pressure effects while passing it through a shearing orifice so as to disrupt the natural cell structure of the protein bodies. Subjecting the protein material, in a concentrate process, to a momentary pressure build-up and sudden release of the cellular tissue of the protein bodies gives a released protein that has markedly different viscosity properties than are possessed by protein concentrates prepared in accordance with prior art procedures.
