Abstract
Abstract A new physical form of collagen termed microcrystalline collagen is a water-insoluble but water-dispersible ionizable, partial salt of collagen and is formed by treating undenatured collagen with dilute acid solutions having a pH between about 1.6 and 2.6. Mechanically disintegrating the treated collagen in aqueous liquids until at least 10 percent by weight has been reduced to a submicron size produces dispersions in the aqueous liquids which have an essentially constant viscosity. This new form of collagen may be used in a wide variety of food, pharmaceutical and cosmetic preparations.

The method of producing a water-insoluble, ionizable, partial salt of collagen which comprises distributing through a body of undenatured, fibrous, natural collagen an aqueous solution of an ionizable acid having a pH between about 1.6 and 2.6 based upon a 1 percent solids concentration, allowing the acid to react with the available amino groups on the collagen to form a water-insoluble, ionizable, partial salt of collagen containing between about 0.4 to about 0.7 millimole of acid calculated as HCl per gram of collagen based upon collagen containing approximately 0.78 millimole of primary amino groups per gram of collagen, while maintaining the temperature below 30* C. and recovering the partial salt essentially free of tropocollagen and degraded derivatives thereof.
Claim 6
Dependent Claim
