An Improved Method of and Apparatus for Cooking Fruit and other Articles by Steam.
Abstract
Abstract 14,894. Roberts, F. C. June 26. Steam cooking-apparatus.-Fruit, vegetables, &c. are cooked by steam passed through each article from the inside. The apparatus comprises a steam-generator 1, fitted with a steamtight cover 6 having a rim 10, which supports a preferably glass casing 11 closed by a lid 12. The cover 6 is formed with a socket 13, in which telescopes a perforated tube 18 provided with a cap 20; it supports a perforated shelf 15, and is furnished with drain-holes 14. When the apparatus is used, the fruit &c. is cored so as to fit closely around the tube 18, and the cap 20 is pushed in to close all holes above the fruit. In a modification suitable for steaming rice and other substances in bulk, the tube 18 is replaced by a small perforated cap, and the shelf 15 by a screen having arms, to steady it against the casing, and a raised centre to fit the cap. An apparatus for cooking several articles simultaneously is also described. The steam may be obtained from an outside source connected to the tube 18.
