Abstract
Abstract Methods of forming bioadhesive polyphenolic proteins containing 3,4-dihydroxyphenylalanine residues from protein precursors containing tyrosine residues are provided comprising: preparing a tyrosine-containing protein; reacting said protein with a tyrosinase enzyme at a pH of from about 4.5 to about 8 and a temperature of from about 20° to about 37°C. at an enzyme to protein ratio of from about 5to about 50 Units enzyme per µg protein; and thereby forming a bioadhesive polyphenolic protein containing 3,4-dihydroxyphenylalanine residues.
