Les microcapsules, selon la présente invention, se caractérisent en ce que leur paroi est constituée par de la sérumalbumine dont une partie est réticulée par polymérisation interfaciale à l'aide d'un réactif bifonctionnel acylant, et dont l'autre partie, non réticulée, est dénaturée à l'aide d'un alcool.
