Abstract

If a microbial protein substance is subjected to an extraction treatment to reduce its nucleic acid and lipid content and then hydrolyzed with endoproteases, a functional hydrolyzate is obtained which is suitable for protein-rich, milk-flavored coffee whiteners. The coffee whiteners are perfectly soluble, show a good brightening effect and a pleasant taste. They are particularly suitable for improving the nutritional balance and taste of standard coffee whiteners.
